When the farmer becomes the artisan of taste.

By modifying our farming practices, we can directly influence the taste of our olive oil.

By December, olives are turning red, burgundy and black. They begin to lose their moisture and dry out on the tree.

Fine hills and valleys are carved into the skin, and the olive lifts off the tree at the slightest gust of wind.
The olive then reaches full maturity. Tastes of ripe apple and almond predominate. Ardency and bitterness are attenuated, allowing subtle aromas to express themselves.
