Mill opening dates and times

2024/2025 campaign

  • Opening on Monday, October 21, 2024
  • Start of the AOP campaign
  • Provence and Haute-Provence AOP: date to be announced
  • Olive reception: No appointment needed, Monday to Saturday from 7:00 AM to 7:00 PM. Closed on Sundays.
  • End of the campaign: We are generally open until the end-of-year holidays, and sometimes a few days into January for the final batches. Please check with us starting December 15, 2024.

List of services and conditions (crushing, bottling, storage, filtration, container sales, etc.) :

Professional or amateur producers, we produce your olive oil in our mill on the day you bring it in, or the day after.

AB, PDO Provence and Haute Provence approval: please identify yourself before registering your batches. (Please provide proof).
We only accept batches of healthy olives.

Olives picked up from the ground, frozen, moldy or too worm-eaten will be refused. Olives will be delivered without branches. Don't worry if there are still a few leaves, a leaf stripper will remove them at the beginning of the chain.

We receive your olives from 5 KG up to 3 tons without appointment.
If you need more than 3 tons, please call us.

From 5 to 150 kilos, your olives are “pooled” with other suppliers.
Over 150 kg, you get the oil from your olives. You deposit your batches and come back later to collect your oil.

By reservation, we can mature and crush your olives.

We can lend you our paloxes to transport your harvest to the mill.

You can bring your identified containers (except glass), clean and dry.
Dirty or non-compliant cans will be refused.

We offer for sale on site
Plastic drums from 3 L to 60 L.
Stainless steel drums from 3 L to 75 L.
Stainless steel tanks and IBCs (polypropylene food containers in metal cages) from 200 L to 1000 L to order.
A Voluntary Extended Contribution of 0.16 euros (excl. VAT) per kg of oil produced is payable by the producer to France olive, the olive-growing interprofession.


The harvest is the culmination of a whole year's work.
It's also a time for sharing with family and friends, a time for conviviality over a sardinade and a glass of good wine in the fresh air. We wish you a happy and healthy harvest!

Harvesting advice

Yields vary from year to year, but also depend on harvest date, variety and terroir. The mill, with its modern 2023 crushing line, guarantees the best possible technical results. Yields are calculated in liters of oil per kilo of olive. They generally vary from 15 to 18% at the start of the season, rising to between 25 and 30% at the end. Average yields are displayed every week at the mill.

Your harvest dates will depend on the fruitiness you want to achieve. Green olives and olives turning in November are ideal for producing a fruity green oil with a fairly pronounced bitterness and pungency. These oils are the most highly concentrated in polyphenols and antioxidants, which are beneficial to health and ensure optimal preservation of the oil. Harvesting before December 15 also has the advantage of sheltering olives that are insufficiently protected against fly bites and frost damage. Haute Provence PDO oils necessarily fall into this category.
Fruités mûités are generally produced from December 15 onwards. They are sweeter and less bitter.

The fruités maturés, or old-fashioned flavors, are generally produced at the beginning of the season with very fresh, clean olives that still contain sufficient vegetable water.
