Lavender is a member of the Lamiaceae family.

Like all her friends, she uses pollinating insects to transport pollen and fertilize it.

To ensure maximum attractiveness, the plant produces a sweet, fruity nectar that makes bees go crazy! It's this nectar that they gather and laboriously bring back, drop by drop, to the hive to make honey.
Years with good lavender essential oil production are generally ideal for honeyflow.

Light to golden yellow in color, depending on the year, this honey is delicate and long on the palate, with floral fragrances.

Its aromas are fruity and pleasant
Its texture is unctuous with fine crystallization fairly quickly after harvesting. It keeps well.

Tip: if you want to make your crystallized honey liquid, put it in a bain-marie at 30°C. It will retain all its vitamins and benefits, and will be spreadable on rusk again without breakage or fatalistic sighs.
