For generations, life has been organized around these crops. But it's a different matter when it comes to trees and plants that are more than a hundred years old. Before you prune a branch, you think about it: 200 seasons, 200 years of olive growers have gone before you, and they're watching you with a suspicious eye. These trees have given them a living, sometimes a livelihood. They have fed men and women, cared for them, made them dream, made them poets and sometimes pacifists.
These sages don't produce much, and not every year, but their fruit is of unbeatable quality.
Planted before the industrial era, they are indifferent to modern farming techniques, and laugh at tractors. They're not in rows. They're on the slope, where a man of experience knows that a little earth can nestle. In the crevices of the rock, where roots can find their way between the slopes. Where sometimes, in the cool hollow, a bouquet of violets welcomes the sorrowing soul who has come to hum the solitude of kings. Everything has to be done by hand, and it will take as long as it takes. They know that for it to be good, you have to count so gently that you forget to count.
Every day, for hundreds of years, they have shaped their environment. It takes patience to learn to hear them, to listen to them and finally to understand them.
