Ancient olive pressing techniques involved fermenting the harvest in jute sacks to facilitate extraction. But this altered the taste of the fresh fruit. We set out to develop techniques that would reconcile quality with the typical taste.
Our predecessors had to keep the olives in their granaries for several days so that they could ferment and release their oil at the mill.
Unfortunately, during fermentation, bacteria and fungi developed, giving the oil a pronounced rancid taste. Thanks to our modern mills, we can extract the oil from the olives on the day they are harvested, which has led to an enormous gain in quality, but has also meant the loss of these fermentation flavors. Over the last ten years, we've been investing and innovating to restore these flavors while maintaining the quality of today's oils. And it's paying off. We're delighted to have built up the know-how to bring you this mature olive oil with the chemical and organoleptic characteristics of an extra virgin olive oil!
